Parmesan Zucchini Spears





I'm always looking for new sides to pair with our meat. Sometimes steamed broccoli just gets old and you don't want  super heavy starch. I've tried a few different recipes with zucchini and this by far is one of my favorites! Very simple and very few ingredients!

Ingredients: 

  • 2 large fresh Zucchini (cut in half, then slice in half, they should be between 3-4" long
  • 1/4 cup grated parmesan cheese 
  • 1 Tbsp Italian Seasonings
  • 2 TBSP Extra Virgin Olive Oil
  • pepper (to taste)
  • salt (to taste, you won't need more than a pinch)
DIRECTIONSPre-heat oven to 350F. Place foil on a baking sheet. Pour EVOO into a small bowl and lightly brush both sides of the zucchini and place on baking sheet. Mix cheese, herbs, salt and pepper together in another small bowl and sprinkle over the zucchini. Bake for 15 minutes and then broil for the last 3-5 minutes until cheese is crispy and brown.
