Chicken Caprese Flatbread Pizza



Ok... let's face it, who doesn't love pizza?!?! It is one of my all time favorite comfort foods, however, it can very quickly become a wrecking ball in your healthy eating plan. It's all about portion control and the toppings. There is a big difference between the meat lovers special and a veggie pizza. I have managed to find something in between. I have shared some of my flatbread pizza's in the past, but this one is by far my favorite to date!

Here is what you will need.

* 1 package of Original Naan Flatbread ( you can find this in the deli area near wraps and tortillas at grocery stores. I have also found it in the produce section of Target.) The package comes with 2 flatbreads.

* 1 chicken breast
* 1 plum tomato
* fresh milk mozzarella ( I use Sargento)
* 1 jar of Pesto ( I like the Classico brand. You can find it near tomato sauces and pastas)

Directions:

Slice your tomatoes and mozzarella into thin slices and set aside. Then cut up your chicken breast into small chunks.
Preheat your oven according to directions on the flatbread package.
In a skillet, saute' the chicken in a tsp of pesto and a little pepper. When done set aside.
Spray a baking pan and lay flatbread on pan.
Spread about 1 TBSP of pesto on each flatbread.
Then evenly divide chicken between the flatbreads.
Next, lay the tomato slices on top.
Finally, the mozzarella (you will want to measure your mozzarella with your blue container.)

Then, bake the flatbreads for 4-6 minutes or until cheese is melted and edge of crust looks slightly golden.

Take your flatbreads out of the oven and serve!

Each flatbread will count for 1/2 green, 1-1.5 red (depending on the size of your chicken breast. Measure with container to be accurate), 2 yellow, 1 blue, 2 tsp
