Italian Chicken Sausage with Onions & Peppers

For this recipe you will need:

1lb or package of Italian Chicken Sausage Links. I use the Publix Greenwise Organic Hot Italian Chicken Sausage.
1 Green Pepper
1 Red Pepper
1 Yellow Pepper
3 small or 2 medium onions
3 cloves of garlic minced
1/2 cup of Organic Tomato Sauce ( I choose Bertolli)
1 cup of Chicken Broth
2 TBSP EVOO
pinch of Salt
1/2 tsp Pepper
1 tsp Italian Seasonings
1/3 box of pasta (I prefer gluten free, but whole grain is ok too.)

First Slice your onions and peppers thin and mince your garlic. Pour your EVOO into a large pot then through veggies on top and Saute. While your veggies are cooking, place your chicken sausage in a pan and add 1/4 cup of water. You will cook the sausage for a total of 20-25 minutes flipping every 5 minutes. You will need to add a little bit of water every few minutes to keep them from sticking and burning to the pan.

Meanwhile, saute your veggies for 15 minutes. Then, add your tomato sauce, broth and seasonings to pot. Stir in, cover and simmer.

Once chicken sausage has cooked for about 20 minutes, add the chicken sausage to the pot and bury down into the veggies. Continue to cook on a low simmer, covered for another 10-15 minutes while you boil your pasta.

Once your pasta is done, drain the pasta. Then take your Sausage, Onions and Peppers off of the heat and serve. For my 21 Day Fixers, don't forget to use your containers to measure!
